Korhai Special
derived from the use of ginger and highly flavoured with a mixture of aubergine, mushroom, tomatoe, green pepper and onion. cooked with a wide range of spices served in a cast iron dish. a unique traditional dish of class.
Bhuna
a combination of spices cooked along with onions and tomatoes to create a rich flavour in a medium dry sause.
Massala
a medium strength preperation with a variety of spices fried with onions, tomatoes and peppers with diced egg.
Dupiaza
a preperation similar to bhuna where chunky roast onions are mixed with spices and fried briskly to create a medium strength sause.
Kurma
a preperation of mild spices in which cream and yoghurt are added to create delicacy.
Rogan
tender diced ingredients cooked in a delicately flavoured sause with a tinge of ginger, garlic and tomatoes.
Pasanda
mildly spiced and cooked with almonds, fresh cream and herbs.
Dhansak
carefully prepared with lentils and a wide vareity of spices; lemon juice, pineapple and added sweetness to give a sweet and sour dish.
Madras
a central and southern indian dish having a greater proportion of hot spices to give you a rich, hot flavour, slightly tangy from added lemon.
Methi
methi is a special herb leaf with a flavour of its own, which is added to a medium strength curry.
Vindaloo
Related to the madras but with a greater use of spice and garlic.
Malayan
prepared with mild spices in wich pineapple is used to create the unique flavour.
Kashmir
spiced medium strength with banana and tomato.
